Monthly Recipe: Healthy Shamrock Shake
INGREDIENTS
1 cup full-fat coconut milk
1 medium avocado
2 teaspoons vanilla extract
1/4-1/2 teaspoon mint extract to taste
pinch pink Himalayan salt or salt of choice
2-4 dates for sweetness
1 cup ice as needed
coconut water as needed
INSTRUCTIONS
Add coconut milk, avocado, vanilla extract, mint extract, salt, and dates to a blender and blend until creamy smooth.
Add in ice and blend until thick and creamy, adding a little coconut water as needed.
